100% Grass Fed Beef Perfectly Roasted Prime Rib

Description:
Scott Pampuch, Executive Chef and Owner of Corner Table Restaurant, uses Thousand Hills Cattle Company 100% Grass Fed Boneless Ribeye Roast in combination with the following ingredients and preparation techniques to create the perfect Prime Rib Roast meal:

Ingredients:

  • 4# Boneless Ribeye Roast
  • 12 cloves garlic
  • 1 Tbsp black peppercorns
  • 1 cup kosher salt
  • 4 sprigs fresh Rosemary
  • 5 Allspice berries
  • 6 Bay leaves

Preparation:

  • Toast peppercorns, salt, Bay leaves and Allspice berries
  • Chop Rosemary and garlic
  • Combine spices, Rosemary and garlic
  • Rub roast and let marinade for 24 hours
  • Roast at 400° until thermometer inserted in middle of the meat reads 125°,remove from oven and let rest for 20 minutes
